I've recently become a huge fan of The Cast Iron Cowboy, Kent Rollins, via you tube videos.
Just finished making his Chicken Fried Steak w/Green Chili Gravy. This is life changing stuff !!!
If you're ever in need of a rainy day project, check him out. None of the pompous b.s. Flies a flag from his chuckwagon and thanks veterans. His motto is 'You Can't Get Full On Fancy'.
BURP !!!!

He has some good recipes. Simple ingredients, but great flavor.
He did a tribute video to his dog Beeg after he died, and for some reason, my allergies started acting up.
My wife and I follow another guy on YouTube called ''Sam the cooking guy'' from San Diego. He has some great recipes that we've tried.

Not sure how there could be a connection between his tribute show and allergies but ya gotta go with what works for you.
So far, all of the things I've seen in his videos that I've tried have turned out great.
Like you said, simple but really tasty.

I have to agree that You Tube is a valuable resource. very informative and useful.
But cooking shows? I haven’t been that bored.

Au Contrair, Mon Ami; .................
I enjoy rendering some hapless beast or fish to possession and processing it to the freezer or the kitchen. If I can harvest some wild greens for a salad or pick some in season berries for a side, so much the better. Better yet, if some home bottled Mead or Elderberry wine is involved !!!
And even more better, if I can pass something like jackrabbit or bobcat off on some unsuspecting soul and have them ask for seconds.
One of the T.V. cooks likes to say "Hunt with skill, cook with style". Works for me !!!
