Any home canners?
Any secrets to making salsa?
Canning green beans today. First batch is in the pressure cooker.

I snapped a many a green bean and cut a lot of corn of the cob for my grandma to can when I was a kid. Wife used to can when all the kids were her now we don't even have a garden. Had a five year drought couldn't water, the last garden we had the deer ate just about every leaf in it. They even ate the leafs off my pepper plants. Sure miss can pickles and tomato juice.

Had to build a fence to house giraffes to keep the deer out so we could have a garden.
Last 4 years didn't have time to can. So making up for lost time now.
So use to droughts and watering. Fall over dead if we ever had a wet summer again.

Got the salsa prep thing figured out.
Just hope I survive today.
Actually on the last batch of green beans in the pressure cooker.

My wife and I became interested in canning boysenberry preserves some years ago when we discovered a huge free patch growing annually alongside an abandoned railroad track. Finally the economics of canning for the urban dweller became possible! Well, not entirely free, those stickers can be brutal!

Good luck with a lost art!

The idea of botulism and green beans seems to go together and scares me to death.

Just follow directions.
Its the prepping I tend to foul up.
Called a friend who has canned her whole life and she helped me out.
Actually canning is easy. Its the picking and getting the fruits/veggies prepped is the work.

Yeah, well. The question I asked my mom when I was 7 or 8 has never been fully explained to me. I still want to know; why is it called "canning", you are putting stuff in glass jars!

For salsa I use a flat top and roast the tomatoes peppers onions and garlic then blend with fresh cilantro.

A little more work than I'm willing to try right now. But sounds interesting.

First batch is made and in the water bath right now. Had a little left over so had to try it. All I can say is WOW! Going to make another batch as soon as the first one is done. Have a hunch I won't have enough made for this winter.
